Simple Summer Salad

Yaaas! I wanna share this:

I’m at this phase where I am pretty sure my body (or the baby) is telling me that I need to step up my health game. All I have been craving lately is salads and the sight of a freshly peeled fruit is enough to make me cry (though that could be the hormones really). So I have to whip up something quick and easy but fresh enough to pack a punch. This is a really easy one.

You will need

2 onions, finely diced

3 tomatoes, finely diced

1 cucumber (if it’s large, 2 if they’re small)

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon apple cider vinegar

How to

Mix the onions, tomatoes and cucumbers in a large bowl. Mix in your salt, black pepper and apple cider vinegar. Squeeze in half a lemon and mix again. Cover with cling wrap and chill for at least 2 hours before serving.
